Dinner time doesn't have to be boring. Have a party in the kitchen and fill your taste buds with some good eats! Trim Healthy Mama is not only a healthy way to eat, but the food is fantastic! This recipe takes a well loved book recipe and turns it into a casserole the whole family will enjoy. You can make it as spicy as you like. I keep things to a medium heat at my house for all to enjoy. This is easy to assemble ahead of time so that you only have to pull it out of the fridge and bake in the evening, if that makes things simpler.
Ingredients:
- 1 recipe Just Like Campbell's Tomato Soup (page 292/293)
- 2 lbs ground beef or ground turkey
- 1 tsp high mineral salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 cup sour cream or 0% Greek Yogurt
- 1 cup salsa (your spicy level)
- 2 cups cheddar cheese, grated (divided in half)
- 6-8 low carb tortillas (use 6 if they are bigger than fajita size)
**For a Grain and Gluten free option, use the Wonder Wraps from the THM book in place of the tortillas!
Instructions:
Preheat oven 350*. Grease 9x13" pan. Make your Just Like Campbell's Soup and set aside. Brown ground beef. Rinse off the fat and add meat back to pan. Slice low carb tortillas in 3/4" pieces. Add with remaining ingredients to the meat, including your soup. Stir together. Spoon into baking pan, and top with remaining cheddar cheese. You could also layer the tortillas like you would in a lasagna. I layered it this way in the picture. Either way, it works great! Bake 25- 30 minutes. This makes a great assemble ahead of time casserole to keep in fridge until you can bake. If coming from the fridge bake about 45 minutes. Serves 8-10.
Some may ask me for the Just Like Campbell's soup recipe from the book. Well, you will just have to buy the Trim Healthy Mama book to get that special recipe. I'd not give out one of their recipes. It's really a healthy alternative to canned tomato soup! I have NEVER liked tomato soup, but happen to LOVE this soup recipe from Pearl and Serene.
Serve this casserole with a big salad or another veggie of your choice. My friend, Caroline's recipe for Cilantro Lime Cauliflower Rice looks amazing as a "S"/low carb setting side dish. The kids could eat some Baked Blue Corn Chips on the side or some brown Spanish brown rice for a nice Crossover. Briana has some Rice and Beans you might enjoy in a Crossover setting as well and Mrs. Criddle's Kitchen has a nice Mexican Brown Rice too. Both of those sides are nice Crossovers for those nursing or pregnant mamas, growing kiddos or for someone at goal weight.

Great recipe! The seasoning is right on! I layered it because my pan was too small to mix it all up in. Thank you very much!
I also wanted to add that next time I think I’ll put all of the tortillas in strips on the top in the last 10 minutes of baking instead of mixing them in so it will be a little like crispy strips and nachos! Thanks again for the great recipe! My husband enjoyed it too!

I am new at this and have looked everywhere for these low carb tortillas and have yet to find them…please advise.

I have a wheat allergy and cannot eat low carb tortillas. Would the Wonder Wraps work from the new cookbook?

Most folks just rinse the E or FP meats, like ground hamburger or turkey. HOT HOT water…I drain off my other meats though.
I know this is a silly question but I was expecting to see chili powder or something that would give it the taco flavor. Am I missing it or it just isn’t needed?
Susan, There are spices in the mix and the salsa gives it a lot of flavor too. I use mild and mine isn’t too spicy. I guess you can add some if it’s not spicy enough. We like as is.
Here is a THM Taco Seasoning Recipe
INGREDIENTS
⅔ cup chili powder
½ cup ground cumin
½ cup salt
1 whole ancho or guajillo dried pepper (very mild)
1 Tbls. smoked paprika for flavor *OR* cayenne pepper for more heat (can add both)
¼ c. garlic powder
1 Tbls. oregano
1 Tbls. glucomannan or Xantham gum *OR* sub ¼ cup corn starch if you’re not a Trim Healthy Mama
1 cup minced onion
