I have a confession to make. I love rhubarb and strawberry together. They are a match made in Heaven. This past weekend when I spotted the rhubarb in the frozen fruit area at the grocery I grabbed a bag. I knew exactly what I wanted to try! 🙂 I have a few recipes in mind but, here is the first, super simple recipe. This is a yummy FP dessert or snack! I even love to eat it for breakfast with a Frappe'! Rhubarb is a wonderful FP fruit!! You'd have to eat a whole lot of it to make it an E fueled dish. (like 2 cups!)
Rhubarb Berry Whip!
3/4 Cup of 1% cottage cheese
1/2 cup of frozen rhubarb
1/4 cup of frozen strawberries
vanilla
3 packets of Truvia or your on plan choice of sweetener.
1 tbs of water
Place it all in the blender or food processor and turn it on! I let it blend for a bit so it's creamy. SO YUMMY!!!

can i use fresh rhubarb? someone just gave us some today, and this recipe sounds good. (i guess i could just cut the rhubarb, put it in the freezer overnight, and then make the recipe tomorrow!!?!)
