Last week I was inspired to make some pumpkin pudding after making a pumpkin frappe! Fall is full of pumpkin and apple flavors in my mind so this was a natural fit in my day. I was thrilled that it turned out so yummy the first try! I've been making the Choco Pudding from the Trim Healthy Mama book for months but, it's nice to have more flavors to enjoy!
Pumpkin Spice Pudding- FP
2 cups of almond milk
1/2 cup of pumpkin (plain ol' pumpkin)
1 1/2 tsp of gluccomanan
cinnamon and clove
1 tsp of vanilla
Sweeten with stevia! I put in two little packets. You can stick your finger in and taste it to see if you need more.
EASY!!! I dump all my ingredients into my Ninja and get it going. After a few seconds I add in 1/2 tsp of the gluccomanan. Blend some more and add another 1/2 tsp. Repeat one more time! I mix it until I see it is thickened up. The gluccomanan takes awhile to thicken up in the blender. It will start to "glug" "glug" as it gets thicker! I pour mine into two small glass jars and stick it in the fridge. I didn't even need whipped cream!

Yup…I love this pudding!!!
I have plane cinnamon, but not sure on cinnamon and a clove? Is that a separate spice that comes together? Can you think of a good sub? Thanks! 🙂
You could just use pumpkin pie spice, Angie! I just added a shake of ground clove.

I’ve never tried that, Kelly! You could certainly give it a try. I’d say it would need some more sweetener added then to taste.
