Pumpkin Spice Muffin-in-a-Mug
1 egg
1 Tbs of water
1 Tbs of coconut oil
dash of vanilla
2 Tbs of pumpkin (plain old pumpkin...not the stuff with added ingredients)
1.5 Tbs of Almond flour
1.5 Tbs of Flax Seed Flour/Meal
1/2 tsp of Aluminum Free Baking Powder
Dash of salt
Cinnamon (two shakes is my preference)
5 shakes of NuNaturals Stevia
I mix together the wet ingredients first in my coffee mug....then add the dry and mix it well! You could also add a little ginger if you like that flavor in your pumpkin desserts. I bake it in the microwave for 1 minute and 30 seconds. This is very close to the original Muffin-in-a-Mug recipe! I just added the pumpkin and cinnamon! I love this with a cream cheese frosting! I just whip some cream cheese with some Stevia and slather it on top of the warm muffin. Today I just simply enjoyed the muffin with some Fat Free Redi-Whip. I'm sure it would be just as tasty with some real butter on top! This is an S meal or snack for those following the plan! Enjoy! Want to know more about Trim, Healthy Mama? I’ve discovered I’m allergic to stevia extract (Boooo), but Xyletol worked great as a substitute in this recipe, I used about 1 1/2 tsp and it was just right! Thank you again!
I was wondering how much xylitol to use because I am also allergic to stevia. Thanks for posting how much xylitol you like!
Jennifer, I’d say 1 1/2 tbs of xylitol…I’d try that. It usually measures about the same as sugar in recipes.

Mine was really moist/wet, I wonder if I should have cooked it longer? It was delicious either way!
Maybe so..I just see how the top looks and cook 20 seconds or so longer if it’s wet. 🙂
