Colder months call for soup at my house.  Chicken Tortilla Soup is one of my favorites, so I had to make it low-carb.  It's really not very hard to make so many dishes Trim Healthy Mama friendly.  This one fits into the "S" for Satisfying fuel type, but I'll show you how to make it fit into a Fuel Pull or E setting.  For a gluten free soup, just skip the tortillas.  It's still very delish without them. chickentortsoupIngredients:
  • 4 cups chicken broth
  • 4 cups water
  • 1 cup unsweetened almond or cashew milk (don't use vanilla flavored)
  • 1 cup salsa or 1 can of rotel (pick your heat level)
  • 3 boneless chicken breasts (I de-boned a rotisseri chicken)
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream or 1 cup 0% Greek yogurt
  • 1 Tbs butter (to saute' onion)
  • 1/4 cup sauteed onion
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 2 tsp salt (start with 1 and taste)
  • 1/2 tsp pepper
  • 1 tsp THM Gluccomanan or Xanthan Gum
  • 4 low carb tortillas (leave out to keep gluten free)
Directions: Boil chicken in the broth and until tender.  Cut into bite sized pieces and return to a boil.  In a separate small pan, saute' the onion in 1 Tbs of butter.  When the onion is translucent and soft, add to the pot. Add the remaining ingredients to the pot, except the tortillas.  Let it boil for another 10 minutes. Stir often.  Cut tortillas into little pieces. (about 1 inch by 1 inch) Add tortillas and let boil for 10 more minutes.  Serves 6-8.
  • This works great in the crockpot!  Please don't add tortillas until not long before serving. Stir throughout the day.
  • This also freezes very well.  I keep this is 1 or 1 1/2 cup servings in the freezer for an easy grab and go lunch. I use freezer bags and lay them flat.  I'd consider double bagging it in case of a leak while it's freezing.
  • Another short cut is to use canned chicken breast or turkey breast.  I buy a 98% fat free can at Sam's Club. It makes this recipe a real snap to put together.
For a FP or E:  Use Greek yogurt instead of sour cream, all lean breast meat and skip out on the cheese.  You could maybe use a little in it, but it's still very good without.  To make it a solid E, you'd need more of an E fuel.  Perhaps a side of Easy Cheesy Brown Rice, Refried Beans or Rice & Beans.  You could even do a serving of Baked Blue Corn Tortilla Chips for an easy side.  All great options to add on the side to push this into a full E meal. Low-Carb Chicken Tortilla Soup is a wonderful way to add some flavor to your menu. I think your whole family will love this. Pick a heat level that suits you by using mild salsa or rotel..or HOT.
Ingredients

  9. For a FP or E- Use 0% Greek Yogurt, lean chicken breast and skip out on the cheese. Still super yummy! Add more E fuel to this on the side to make it a full E meal. Brown rice, black beans, refried beans, etc.

    Do you need to use the THM or xantham gum? What does this do to the soup?

      Hi Debbie! All those two things to is thicken the soup. They are our on plan options to do that.

      I buy packs of 13 oz cans of chicken at Sam’s Club. I just use one of those, but you could use two.
