- 1/2 cup egg whites
- 2 Tbs THM Oat Fiber
- 1/2 tsp vanilla extract
- 1/2 Tbs of THM Sweet Blend(or a bit more if you use Truvia)
- pinch of salt
- 1/2 cup Low Fat Greek Yogurt
- 2 oz Cream cheese (softened)
- 1/2 Tbs THM Sweet Blend (or a bit more if you use Truvia)
- 1/2 tsp vanilla extract
- Crepes:
- 1/2 cup egg whites
- 1 Tbs THM Oat Fiber
- 1/2 tsp vanilla extract
- 1/2 Tbs THM Sweet Blend
- pinch of salt
- Filling I used:
- 1/2 cup Low Fat Greek Yogurt
- 2 ounces softened cream cheese
- 1/2 TBS THM Sweet Blend
- 1/2 tsp vanilla extract
- Whisk the crepe ingredients in a bowl while you get a pan heated to medium heat. Non stick pan worked best for me. Spray with cooking spray. (I used olive oil cooking spray)
- When the skillet is hot, pour half the mix in the pan, move pan around the get it to cover the bottom or the size you want it. Make it spread evenly.
- When it is done around the edges use a spatula to slip it over. It shouldn't stick to the pan if it's ready to flip!
- FLIP and let it cook for a few more seconds. It should be done quickly. Fill as you desire.
- *FP- No cream cheese in the filling. Up to 1 cup of berries or up to 1/2 cup if it's blueberries.
- *E- No cream cheese in the filling. Use E fruits like 1/2 a banana or a peach for a different twist!
- *S- Cream cheese used! Use up to 1 cup of berries or up to 1/2 cup if it's blueberries.

In the blog post you put 2 TBlsp of Oat fiber and in the recipe printable you put 1 TBlsp. Can you clarify which it is?

Tried these. Easy to make and easy to cook, although I need practice. I some savory. I put some pizza seasoning in it and then topped with turkey pepperoni and dash if hamburger and a sprinkle of bacon bits and cheese. Put them in the oven to see what would happen. They crisped up around the edges and we had mini crepe pizza. Then made the sweet kind with a few blackberries. Oh yum.
Just made these babies this morning. Delish! Just a clarification for myself. Is this recipe made to serve 2 people? Or 2 crepes for 1 person? I definitely ate both…But for future reference and portion size 😛 Thanks for a wonderful recipe!

I’ve honestly not tried anything else. I’m wondering if you can use protein powder….but I’ve not tried it.

We made the ones from the book last night. The first one was a flop, the second was much better & I ate that. My husband messed up the next one & gave up out of frustration. We are big fans of crepes & have them quite often but the recipe we use calls for a cup of flour. We will definitely be trying yours again soon. We really want to find a recipe that will work for us. 🙂
