- 1/3 Cup of Swanson's Vanilla Whey Premium Protein Powder
- 1/3 Cup of Truvia (or 12 packets) Grind them after you measure it out.(or 1/2 cup of xylitol, powdered)
- 6 egg whites
- pinch of salt
- 1/2 tsp. of vanilla
- 1/4 cup of coconut flour
- 1 tsp. cream of tartar
- 1/2 tsp. of aluminum free baking powder
- 1 and 1/2 cups of berries (mixed, blueberries,blackberries, raspberries or strawberries)
- 8 packets of Truvia or 1/8th cup xylitol
- pinch of gluccomanan (add as needed)
- 1 cup of heavy whipping cream
- 1/4 cup of xylitol (powdered) or Truvia, 6 packets (powdered)
- 1/2 tsp of vanilla

If you just wanted the cake and berries (no whipped cream), would it be a FP since the amount of coconut flour per serving would be so small? Looks delicious!!

Hmm, I don’t know…you could try more coconut flour I guess but, I’ve not tried it.
Well, I just got the cake made today and I’m going to have to say that I am VERY IMPRESSED!! It was absolutely amazing! Now I’m sad that I am out of heavy cream and won’t be grocery shopping until Friday, which means I can’t make this again until Saturday. 🙁

If I want to send a few pieces of this cake to my son in college, do you think they would hold up during shipping? Or the whipped cream would flop? I am in CA and he is in VA.
I’m pretty sure the whipped cream wouldn’t make it. Maybe the cake would be fine but, and he could put some Fat Free Redi Whip on top when he gets it?

I was wondering if you could sub THM baking blend for the coconut flour? I only use that flour now.. Thanks oh and how much baking blend…
I bet so. I’d use a bit more though since the coconut flour is thirstier than the Baking Blend.
