- 1 cup tomato sauce
- 1/2 cup water
- 1 Tbs heavy cream or half and half
- 1 wedge Light Laughing Cow Cheese or 2 Tbs of mozzarella cheese
- 1/4 tsp dried basil, or use fresh
- 1/8 tsp garlic powder, or use fresh
- 1/8 tsp salt
- pepper
- 4 strips crispy bacon (turkey or pork)
- 1 Tbs THM collagen or Custom Collagen (optional)
- 1 doonk of THM Stevia extract
- mozzarella cheese for garnish with a little bit of the chopped bacon
Bacon-Tomato Soup (S)

Hearty soup is good for the soul in any season! Low carb, gluten free.
Ingredients
- 1 cup tomato sauce
- 1/2 cup water
- 1 Tbs heavy cream or half and half
- 1 wedge Light Laughing Cow Cheese or 2 Tbs of mozzarella cheese
- 1/4 tsp dried basil, or use fresh
- 1/8 tsp garlic powder, or use fresh
- 1/8 tsp salt

Instructions
- I added all the ingredients into my small sauce pan and let them simmer. I kept my stove on low heat.
- I cut my Laughing Cow Cheese up in little pieces so it would melt faster or you can just use some mozzarella. I loved having a bit of creamy cheese in my soup.
- I did put the heavy cream and collagen in near the end.
- Let it simmer for 10-15 minutes or so. I could really taste the bacon-y goodness after it melted together in the pan for that long. Don't let it sit without stirring too much or tomato sauce tends to scald in the pan. Stir it here and there.
- Adjust for your taste.

Mmmm… Sounds good, Jennifer. Thank you! Do I understand correctly that you added the cream and collagen at the end of the 15 minutes? Do you just cook it a minute or two after adding them? I haven’t used collagen much in my cooking. Thanks again!
I did, but you could probably do either.
I put collagen in everything hot, but always stir it into a bit of cold liquid first – (in this case I’d use the water) and make sure it’s dissolved before adding to the pot.
This recipe looks like a keeper! Who doesn’t already love tomato soup, but then bacon????? Sounds heavenly!

What kind tomato sauce do you use?
I just use whatever is on sale. I think this time it was Hunt’s. I buy cartons of it at Walmart.
