- ½ Stick of Butter
- 1-2 Onions, diced
- 2 Green Peppers, chopped
- 2 Red, Yellow or Orange Peppers
- 1-2 Jalapeno Peppers (Add more if you prefer the heat or leave it out if you want this mild)
- 2 or more Garlic Cloves
- 1 lb of Chicken Breasts or thighs
- 1 cup Water
- 3 Chicken Bouillon Cubes
- 1 cup of diced of Tomatoes
- Glucomannan (start with 1/2 tsp and add to desired thickness) You could use Xanthan Gum as well.
- 2 tbs of Paprika
- 1 Cup of Unsweetened Almond Milk
- 1 Cup of 0% Greek Yogurt or Sour Cream
Combine and sauté the first 6 ingredients for 5 minutes. Add chicken and cook it through. Remove Chicken (may shred or leave whole). Add water, bouillon cubes and tomatoes to pan and cook down. Meanwhile make a white sauce/ roux in another sauce pan by adding 2 tbsp of butter. After melting, add the Gluccie or Xanthan Gum and whisk together. Then add unsweetened almond milk to main pan after roux thickens. May add more milk if needed. Mix in Greek yogurt or sour cream and paprika. Add Whole or Shredded Chicken back into dish. Serve by itself, with cauli rice, THM Not-Naughty Noodles or with Dreamfield's pasta. For your children or if you are at goal weight, you could eat this with a side of brown rice. This is great to make and then keep warm in a crock-pot!

I don’t have her original recipe now. Wish I did since a few have asked about that. I know there was some soy products involved in place of the yogurt or sour cream. I think she uses an Earth Balance type butter spread as well.
That looks amazing. Do you think the roux would taste okay with just 1 Tbsp of butter? I’m thinking this could be made FP for my next Fuel Cycle. I’m sure it’s far tastier as an S, but this might be an awesome FP.
You can try it! I like my butter! lol This is full of flavor so I’m sure it will still be yummy.
What sides would you serve this with?
Hi Roxanne! I’d probably eat a salad with this or another deep S side like Green beans or broccoli. I think it would be great served over some buttery spaghetti squash as well. <3

I actually didn’t even make the roux the 2nd time I made this…..just added yougurt/sour cream to the tomato mixture and added seasoning as needed(I used a whisk) and combined all the chicken after and it was yummy. Just figured I could save myself 1 step and cleaning an extra pan 😉
